This micro-lot is 100% a natural mutation of Typica, which is a yellow cherry when ripe. Yellow cherries have been shown to be sweeter than red cherries and have an increased textile sensation in the final cup profile. This coffee was exposed to a 24 hour dry aerobic fermentation, then moved into grain pro bags for 90 hours, causing the cherries to have a higher lactic acid content.
