This coffee comes from Mario Martinez's 4-acre farm called La Ardilla in the community of Opalaca, Honduras. Mario's family previously worked with a local middleman to sell and export his coffee. Over the last three years he has been working with Catracha Coffee, who assists in the exporting of coffee as well as acting as a non-profit called Catracha Community. Coffee sales create income for the non-profit, allowing them to establish and maintain an art residence and studio in Santa Elena, Honduras. Through this residence, artists from all over the world have been hosted to come and run art classes two days a week for children in the community of Santa Elena. This brought a vibrancy to the community through its now flourishing street art, as well as providing an opportunity for young people to invest their time in learning more about art.
As Mario has been working with Catracha, he has begun to process his coffee using his own micro-mill. He fertilizes with organic compost and uses organic fungicides to control leaf rust. Mario focuses on organic farm management practices to ensure a clean, high quality product is being produced on his farm.
We taste gingerbread, almond, raisin.
