Over the last few years, we have focused on sourcing all of our Ethiopian coffees through Catalyst Trade. They are an importing company based out of Portland, Oregon dedicated to quality, sustainability, and intentionality. We've been so excited to bring another Ethiopian into our menu from them and this one definitely stands out!
Aliye Majo is an 8 year old, 5.5 hectare farm in the Chire district of Sidama. This coffee is grown in nitisol soil, which contains high clay content and is among the most nutrient-rich soils on earth. Following harvest, the cherries are floated in water to sort for quality. They are then dried for 15-21 days while being turned up to 6 times per day to closely monitor and control moisture content. This coffee has the bright, fruitiness you would expect from a natural process Ethiopia while still having richness in the cup.
