This coffee comes from the EK-BALAM Cooperative, which is comprised of over 1,300 growers in 6 municipalities and 35 communities around northern Chiapas. It sits in the center of the Sierra Madre de Chiapas mountain range. The name EK-BALAM comes from the Mayan terms "Ek," meaning "star" and "Balam," meaning "jaguar." EK-BALAM is full of producers who have been involved in coffee production for generations. It was developed in 2019 as a collaborative effort in response to the 2012 coffee rust disease outbreak that destroyed many farms in the region.
This coffee has the rich nutty sweetness, characteristic of coffee from this region, with a light sweet fruity finish. It has great versatility, making it ideal for a variety of brew methods.
